BANOFFE PIE WITH BAILEYS CREAM
"What can you say about Banoffee Pie that hasn’t already been said? All that toffee, bananas and cream. Pure heaven. I have put this dish on several menus and people love it, it is one of the most popular deserts I know. The true proof of its greatness as a pudding is that the waitresses always beg for a slice after work. Without fail!"
You can either make a large cake and cut individual slices or for something a little special why not make individual portions (see picture)
Ingredients:
130g Digestive Biscuits
60g Butter
1 Tin of Condensed Milk
3-4 Bananas
350ml Double Cream
1 Shot of Baileys
1. Make the toffee
Place the tin of condensed milk in a deep saucepan and cover with water. Place it on the stove and bring to the boil. Let this cook for 4 (four!) hours. This is very simple, but does have one rule that must not be broken. You must keep topping up the water. This is very important. If you do not do this, you run the risk of the tin exploding and
covering your kitchen in toffee.
2. Crush the biscuit base
Crush the digestives until they resemble bread crumbs. This can be done by hand or in a food processor.
3. Greaseproof paper
Line the base of a cake tin with a circle of greaseproof paper.
4. Make the biscuit base
Melt the butter and add to the crushed biscuits, mix thoroughly. Place the mixture in the tin and press down evenly and firmly. Put it in the fridge and allow to set.
5. Apply the toffee and eat the rest
Once the condensed milk has cooked for 4 hours and has cooled, open the tin and spread the toffee mixture on top of the biscuit base. Spread the toffee evenly across the base. Please be sure to finish all the toffee even if that means scraping every last bit with your finger.
6. Slice the bananas
Peel and slice the bananas. It is up to you if you want them thick or thin. Lay them all over the toffee mixture.
7. Whip the cream
Place the cream in a bowl and with a whisk whip the cream until thick. One way of checking that it is ready is to turn the bowl upside down. If it is ready it won’t redecorate your kitchen floor! Be careful not to over whip it. If it is very thick and looks slightly grainy, then it is ruined and you will have to start again.
8. Spread the cream
Fold the Baileys into the cream with a metal spoon, then put the cream all over the bananas. Drop the tin gently on to the work surface a couple of times to evenly spread the cream.
9. Enjoy
Now, carefully cut a slice, serve and enjoy.
